쿠키랩스, AI 기업 도둠판 및 고려대학교 생명공학과 박사와 MOU...미래식량자원 맞춤형 식품 제조 기술 확보 박차

맞춤형 케이크 3D 프린팅 서비스를 운영하는 쿠키랩스(대표 한은호)와 맞춤형 AI 서비스 제공 기업 도둠판(대표 박상규), 그리고 고려대학교 생명과학대학 출신 이수현 박사가 미래식량자원 맞춤형 식품 제조 기술 확보를 위해 업무협약(MOU)을 체결했다고 13일 밝혔다.

쿠키랩스는 케이크를 비롯한 디저트의 맞춤형 3D 프린팅 기술을 보유하고 있으며, 고객이 원하는 모양과 디자인을 정밀하게 구현하는 기술력을 인정받고 있다.

도둠판은 맞춤형 AI 서비스 제공 기업으로 딥러닝 기반의 최적화된 AI 솔루션을 제공한다. 단순한 모델 개발을 넘어 GPU 서버 인프라 설계와 운영, 마케팅 특화 데이터셋 구축, 그리고 실시간 성과 측정을 위한 경량화·추론 최적화 기술까지 지원한다.

이수현 박사는 식품 소재 및 바이오 소재 연구 역량을 바탕으로, 3D 프린팅에 최적화된 푸드 잉크 개발을 주도한다.

이번 협약을 통해 세 기관은 ▲3D 프린팅 기반 맞춤형 식품 개발 ▲AI를 활용한 개인 맞춤형 디자인 및 서비스 제공 ▲차세대 푸드 잉크 연구 및 상용화 등을 공동 추진할 예정이다.

쿠키랩스 한은호 대표는 “이번 MOU를 통해 고객이 상상하는 디저트를 현실로 구현할 수 있는 기술 기반을 더욱 강화하겠다”라며 “앞으로도 기술 혁신을 통해 차별화된 고객 경험을 제공하겠다”라고 답했다.

도둠판 박상규 대표는 “AI 기반의 맞춤형 솔루션을 접목해 소비자 중심의 새로운 식문화 경험을 제공하겠다”라며 “3자 협력을 통해 푸드테크 산업 발전에도 기여할 수 있길 바란다”라고 답했다.

이수현 박사는 “기존 식품 연구에 AI와 3D 프린팅 기술을 접목하는 것은 식품 산업 혁신의 중요한 전환점이 될 것”이라며 “지속 가능한 미래 식품 개발에도 기여할 수 있을 것”이라고 답했다.

이번 3자 협력은 단순한 기술 협업을 넘어, AI·3D 프린팅·바이오 소재 연구가 융합된 신개념 푸드테크 생태계를 구축하는 데 중요한 출발점이 될 것으로 기대된다.

한편, 쿠키랩스와 도둠판은 마포비즈니스센터·마포비즈플라자 입주 기업으로, 운영사인 홍익대학교 산학협력단이 주선한 멘토링 프로그램(멘토 도둠판, 멘티 쿠키랩스)에서 만나 업무협약을 체결했다. 고려대학교 이수현 연구교수는 고려대학교 산학협력단 기술사업화센터에서의 네트워킹을 통해 도둠판을 만나 이번 업무협약에 합류하게 되었다.

CookieLabs, which operates a customized cake 3D printing service and is led by CEO Mr. Han, said on the 13th that it has signed a memorandum of understanding (MOU) with Dodumpan Co., Ltd., a provider of customized AI services led by CEO Dr. Park, and Dr. Lee, a Ph.D. from the College of Life Sciences at Korea University, to secure customized food manufacturing technology for future food resources.

CookieLabs has proprietary customized 3D printing technology for cakes and other desserts and has been recognized for its technical capability to precisely realize the shapes and designs customers want.

Dodumpan Co., Ltd. provides customized AI services, offering deep learning-based, optimized AI solutions. Beyond model development, the company supports GPU server infrastructure design and operations, marketing-specialized dataset development, and lightweighting and inference-optimization technologies for real-time performance measurement.

Dr. Lee will lead the development of food ink optimized for 3D printing based on her expertise in food ingredient and biomaterial research.

Under the agreement, the three parties plan to jointly advance (1) development of customized 3D printing-based foods, (2) provision of personalized designs and services using AI, and (3) research and commercialization of next-generation food inks.

“Through this MOU, we will further strengthen the technological foundation that can turn the desserts customers imagine into reality,” said Mr. Han, CEO of CookieLabs. “We will continue to provide a differentiated customer experience through technological innovation.”

Dr. Park, CEO of Dodumpan Co., Ltd., said, “By incorporating AI-based customized solutions, we will provide a new, consumer-centered food culture experience,” adding, “I hope this three-party collaboration can also contribute to the advancement of the food tech industry.”

Dr. Lee said, “Integrating AI and 3D printing technologies into existing food research will be an important turning point for innovation in the food industry,” adding, “It will also be able to contribute to the development of a sustainable future food.”

This three-party collaboration is expected to serve as an important starting point not only for technical cooperation but also for building a new food tech ecosystem that converges AI, 3D printing, and biomaterial research.

Meanwhile, CookieLabs and Dodumpan Co., Ltd. are tenant companies at the Mapo Business Center and Mapo Biz Plaza, and they signed the MOU after meeting through a mentoring program (mentor: Dodumpan Co., Ltd.; mentee: CookieLabs) arranged by the operator, the Hongik University Industry-Academic Cooperation Foundation. Dr. Lee, a research professor at Korea University, joined the MOU after connecting with Dodumpan Co., Ltd. through networking at the Technology Commercialization Center under the Korea University Industry-Academic Cooperation Foundation.
